A warm bowl of anti-inflammatory winter soup made with ground beef, carrots, celery, tomatoes, and fresh herbs

Hamburger Stew: Stop Inflammation/Feel Good

January 25, 20262 min read

When winter rolls in, your body craves warmth, nourishment, and simplicity—and this anti-inflammatory winter soup delivers all three.

This soup checks all three boxes.

It’s one of my favorite go-to recipes because it’s:

  • Easy to make

  • Packed with anti-inflammatory ingredients

  • Deeply satisfying

  • And yes… delicious

This cozy bowl of goodness has long been a staple when I'm trying to manage my weight, because it supports the body while keeping meals simple, comforting, and grounding–exactly what we want during the colder months.

No fancy steps. No weird ingredients. Just real food that loves you back–this is the definition of a simple healthy soup!

Why This Anti-Inflammatory Winter Soup Works

This anti-inflammatory soup combines warming proteins, fiber-rich vegetables, and anti-inflammatory herbs that help calm the system, support digestion, and reduce inflammation—especially when your body is feeling sluggish, achy, or inflamed.

It’s the kind of meal that leaves you feeling nourished, not heavy.

This winter soup recipe is a perfect example of how a healthy winter soup can be both comforting and deeply nourishing.

Ingredients

  • 1 lb ground hamburger

  • 1 cup chopped celery

  • 1 can diced tomatoes

  • 3-4 chopped carrots

  • 4 cups beef or chicken broth

  • 2 Tbsp Taco Seasoning

  • Fresh cilantro (to taste)

  • Juice of one lime

Directions

  1. Brown the Hamburger with the chopped celery. Season lightly with garlic salt, then sprinkle with 2 Tbsp of taco seasoning. (You can add more if you like a little kick.) Set aside.

  2. Prepare the Carrots: Peel and chop. Place in a microwave-safe bowl with a splash of broth, cover, and microwave for 3–4 minutes until soft but still slightly firm.

  3. Build the Soup: Add the cooked hamburger mixture, Diced tomatoes, broth, steamed carrots, fresh cilantro, and lime juice to a soup pot.

  4. Enjoy the Soup: Warm through, stir well, and enjoy. (Note: This soup is basically done at this point. Don't simmer it for long. You want your veggies a little crisp.)

Makes 4 servings

Make It Your Own

This soup is wonderfully flexible:

  • Swap hamburger for chopped up rotisserie chicken or ground turkey

  • Spice it up with Rotel spiced tomatoes stewed tomatoes

  • Skip the taco seasoning entirely for a simpler flavor

  • Add mushrooms or onions.

  • Leftover diced sweet potatoes are a nice addition.

  • Throw in a handful of fresh chopped spinach just before serving.

  • Play. Experiment. Have fun with it.

There’s plenty of room for creativity here.

This is the same kind of nourishment I often recommend to patients at Meridian Family Acupuncture–simple, warming, and supportive during the winter months.
